-1 tablespoon lime juice

Instructions:

1. Preheat oven to 375 degrees F.

2. In a large baking dish, place the tomatillos. Cut the serrano peppers in half and place them around the tomatillos. Peel and chop the onion and add it to the dish. Smash the garlic cloves with the back of a knife and add them to the dish. Sprinkle with cumin, cilantro, lime juice, salt and pepper.

3. Bake for 30 minutes or until everything is tender and starting to come away from the sides of the dish.

4. Remove from heat and let cool slightly before using a handheld immersion blender to blend until smooth. If you don’t have an immersion blender, you canuse a regular blender, just make sure to let the soup cool slightly before blending.

5. Serve in individual bowls and top with sour cream, cilantro and avocado if desired. Enjoy!
